A Canada Day 4th of July

I've decided I'm going to cook a Brisket this weekend on the grill.

I've always wanted to do one and we might have the ole brother- and sister-in-law over this weekend, so I thought ... why not? The time's right.

I've got a great grilling cookbook -
How to Grill by Steve Raichlin - with a nice recipe for a brisket. So armed with a little bit of knowledge, I went to Costco and got a nice 2.5kg (5.5 lb) cut that will be indirectly slow cooked in my gas bbq. I won't be using gas - I've got an insert for my grill that'll allow me to use hardwood charcoal and save on gas.

As per the recipe in the book, I'll be applying a rub all over the brisket and then I've got hickory chips that I'll put on top of the coals every hour to infuse more flavour and a vinegar-based mop that will be like the icing on a birthday cake.

Guess I'll take pictures and show how things turn out, eh!?
